Spicy Cajun Chex Mix

3 cups gluten free Corn Chex cereal
3 cups gluten free Rice Chex
2 cups Hylde's gluten free pretzels
2 cups mixed nuts (Back to Nature brand)
1/3 cup organic all vegetable shortening
2 tablespoons Emeril's Southwest Essence

  1. In large microwaveable bowl mix cereals, pretzels and nuts.
  2. In 2 cup measuring cup, microwave shortening uncovered about 40 seconds or until melted. Stir in Southwest Essence. Pour over all cereal mixture and stir until evenly coated. Microwave for 6 minutes stirring every 2 minutes.
  3. Spread on wax paper to cool.

Store in air tight container. Makes 24 servings, 1/2 cup each.
