Chex Cereal Snack

5 cups Cinnamon Chex cereal
1 cup dry-roasted peanuts
1 cup mini-pretzel twists
1/4 cup butter or margarine (used Earth Balance)
1/2 cup packed brown sugar
2 tablespoons light corn syrup
1/8 teaspoon baking soda

  1. In a large microwavable bowl, mix cereal, peanuts and pretzels.
  2. In 2-cup microwavable measuring cup, microwave butter, brown sugar and corn syrup uncovered on High for 2 minutes, stirring after 1 minute; stir until smooth. Stir in baking soda until foamy. Pour over cereal mixture, stirring until evenly coated.
  3. Microwave uncovered on High 1 to 2 minutes, stirring and scraping bowl every 30 seconds, just until cereal begins to brown. Cool 5 minutes. Spread on waxed paper or foil to cool; break into bite-size pieces. Store in airtight container.
