Trina's Spinach Puffs

Yields about 6 spinach puffs when made in a muffin pan, but could yield more if made in a different shape.

One roll of Schar Gluten-Free Puff Pastry (or try your hand at a gluten-free puff pastry recipe if you’re feeling adventurous!)
A package of frozen chopped spinach
6-oz container of crumbled feta cheese
Two medium eggs
One onion, finely diced
Salt, pepper, garlic seasoning to taste
Muffin container or baking pan
Margarine or butter to grease pan

  1. Pre-heat the oven to 400 °F and get out your pan or muffin container and grease it.
  2. Warm the spinach in the microwave and make sure the water is completely drained from it. The drier the spinach, the crispier the puffs! In a medium bowl, mix together the drained spinach, crumbled feta, diced onion, one of the eggs and the seasoning. In a small bowl, whisk the remaining egg with a bit of water to create an egg wash.
  3. If using Schar Puff Pastry, follow instructions on the box for thawing. Carefully roll out the puffed pastry and cut it into squares, depending on the size of spinach puffs you want.
    • If using a muffin container, press the puff pastry into the cup and generously fill each muffin and use any remaining puff pastry to create a cover for the puff. Brush with egg wash for additional crisping.

    • Create puff triangles that look like spanakopita by placing a small amount of the spinach mixture onto each square, leaving space from the puff edges. Brush the edges of the puff squares, one at a time, with the egg wash. Next, lift one corner of a square and fold it over to the opposite corner, creating a triangle with the spinach mixture inside. Press the edges closed using your fingers or a fork. Repeat this process until all of the squares are triangles. Brush with egg wash for additional crisping. There are additional variations to try, be creative!
  4. Bake them for about 20 minutes or until the puffs are golden with a touch of brown, and then enjoy!
