Country Gardens Dinner
2 cups sliced peeled raw potato (or more to stretch dinner)
1 teaspoon salt
1 cup diced celery
1 cup diced carrots
1 lb ground beef (browned and rinsed to eliminate any extra fat)
1/2 cup chopped onion
1/2 cup chopped green pepper
1 can gluten free tomato soup (used 2 cups Imagine Tomato Soup)
In a 2 quart baking dish, layer ingredients as listed with potatoes on bottom and tomato soup on top.
Bake covered at least 30 minutes; uncovered (less time if soup starts to burn). Add more time if you increase potatoes.
