Wild Rice with Dried Fruits

1 cup wild rice
3 cups water
1/2 cup chopped green onion
1/2 cup dried apricot halves, chopped
1/4 cup golden raisins
2 tablespoons fresh parsley
1/4 cup pine nuts, toasted
1 teaspoon olive oil
2 tablespoons balsamic vinegar
2 tablespoons orange juice
1/4 teaspoon orange zest
1 garlic clove, minced
1/4 teaspoon salt
1/8 teaspoon pepper

Cook rice and green onions in 3 cups water for 45 minutes, or until tender. Drain. Combine rice, apricots, raisins, parsley and toasted pine nuts. Toss gently. Combine oil, vinegar, orange juice, orange zest, minced garlic, salt and pepper. Shake vigorously to blend well. Pour over rice mixture & toss gently. Serve hot. Serves 6-8
