Potato and Squash Casserole

Potatoes, cut in small pieces
Squash (winter), cut into cubes
1 tablespoon olive oil
1 teaspoon sage
2 teaspoons parsley
1 cup vegetable broth
1 small onion
salt and pepper to taste
Optional: turkey sausage, ground turkey, or hamburger

If meat is added, brown first then drain before adding to casserole. Bake 45 minutes at 400 degrees in 8" x 8" pan.
