Dorito Chicken Casserole

2 cups cooked chicken, shredded
2 cups Mexican cheese (divided)
1 can gluten free chicken soup (Health Valley)
1/2 cup milk
1/2 cup sour cream
1 can Rotel tomatoes, drained
1/2 package gluten free taco seasoning
1 large bag nacho cheese Doritos
shredded lettuce
diced tomato

  1. Mix together 1 cup cheese, chicken, chicken soup, milk, sour cream, canned tomatoes, and taco seasoning.
  2. Grease 2 quart baking dish.
  3. Add 1 cup crushed Doritos to bottom of baking dish. Add the chicken mixture on top of the Doritos. Top with the remaining cup of cheese and more crushed Doritos.
  4. Cover and bake 30 to 35 minutes at 350 degrees. Top with shredded lettuce and diced tomatoes.

Makes 4 servings. Note: I double the recipe except for the taco seasoning and Rotel tomatoes.
