Chocolate-Covered Balls

2 cups Health Valley Rice Bran Graham Crackers, crumbled in food processor
2 cups powdered sugar
2 cups chunky peanut butter
1/2 cup melted butter
1 1/2 bags Ghirardelli chocolate chips

Mix first 4 ingredients together using beaters. Shape into small balls. Chill 2 to 4 hours or freeze 10 minutes.

In the meantime, melt chocolate in double boiler or microwave. Dip balls into chocolate and set on buttered wax paper. Freeze on tray for at least 1 hour, then put in plastic bags to store in freezer.
