Christmas Meringue Cookies

2 egg whites
1/2 cup sugar
1/2 teaspoon vanilla extract

Preheat oven to 350 degrees. Beat eggs until very stiff. Gradually add sugar. Fold in vanilla. Cover cookie sheets with aluminum foil. Drop rounded teaspoons of mixture, spaced slightly apart. Put in oven and turn off heat. Leave in closed oven at least 2 hours or overnight to dry up the cookies. Adapted from sparkpeople.com.
