Chocolate Chip Cookies #1

1/3 cup oil
1/3 cup butter or margarine, softened
1/2 cup granulated sugar
1/2 cup brown sugar
1 egg or egg replacer equal to 1 egg
1 teaspoon vanilla
1 1/2 cup rice flour
1/4 cup tapioca starch (potato starch or arrowroot is fine too)
1 teaspoon xanthan gum
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup chocolate chips
1/2 cup nuts (if desired)

Substitutions:

Preheat oven to 350 degrees. Mix oil, butter, sugar, egg, and vanilla thoroughly. Stir in remaining ingredients. Drop dough by rounded teaspoonfuls 2 inches apart onto ungreased cookie sheet. Bake 12 to 15 minutes or until slightly brown. Cool about 1 minute before removing from cookie sheet. Makes approximately 3 to 3.5 dozen cookies.
