Chocolate Chip Oatmeal Cookies

Cream well:

1/2 cup butter
1 cup firmly packed brown sugar

Beat in:

1 egg
Grated rind of 1 orange
1 teaspoon vanilla
1/2 cup gluten free flour
1 1/2 cup gluten free rolled oats
1/4 teaspoon salt

Fold in:

1 cup chocolate chips

Drop by teaspoonfuls onto a parchment paper-lined cookie sheet. Bake at 350 degrees F for 8 to 10 minutes. (from an old Joy of Cooking)
