Pizelles

2 cups Bette Hagmanís Four Flour Bean Mix
1/2 teaspoon xanthan gum
1 teaspoon baking powder
Pinch of salt
3 eggs
2/3 cup sugar
1/2 cup butter, melted
1 tablespoon vanilla or lemon extract

Place flour, xanthan gum, baking powder, and salt in a small bowl and stir to combine; reserve. Place eggs and sugar in a medium mixer bowl. Mix on medium speed for 1 minute until thickened. On low speed, add the melted butter and vanilla in a steady stream and mix until combined, about 15 seconds. Add the flour mixture and mix until just combined, about 10 to 15 seconds; do not over mix.

Lightly brush both the top and bottom grids with vegetable oil before turning on electric pizelle iron. Continue to brush grids lightly after first three or four pizelles. If batter doesnít stick, itís not necessary to oil grids. If the batter starts to stick, brush grids between cookies even though iron is plugged in. Yield: about 36 cookies.
