Peppermint Fudge

2 packages vanilla chips
1 can sweetened condensed milk
1/2 teaspoon peppermint extract
1 1/2 cups crushed candy canes
1 dash red food coloring (can omit)

Variation: Use 2 cups chocolate chips and 1 cup dark chocolate chips instead of the vanilla chips.

Variation: Use just 2 candy canes, crushed, sprinkled on top as decoration.

Combine chips and milk in saucepan on medium heat. Stir until melted and smooth. When candy is cool, stir in extract, food coloring, and candy canes. Spread in 8-inch square greased pan. Chill two hours before cutting.
