Orange Almond Lace Cookies

3/4 cup butter
1 1/2 cups finely chopped almonds
3/4 cup sugar
1 tablespoon flour
2 to 3 teaspoons orange zest
1/2 teaspoon salt
1 large egg, beaten

Preheat oven to 325 F and cover cookie sheets with parchment paper.

Melt butter in heavy saucepan. Remove from heat and stir in all ingredients except egg. Then add beaten egg. Drop by teaspoonfuls on parchment paper. Bake 8 to 9 minutes. Watch carefully!

Slide parchment paper carefully to cooling rack. Cool completely. Store between paper towels in airtight container up to one week or freeze up to one month.

So easy, but the most difficult part is baking enough but not too much!
