Peanut Butter Balls

2 tablespoons butter, melted
1 cup powdered sugar
1 cup chunky peanut butter*
1 1/2 cups Rice Krispies

*Variation: May also use 1/2 cup chunky and 1/2 cup smooth peanut butter

Mix together the melted butter, powdered sugar, peanut butter and Rice Krispies. Be sure to put Rice Krispies in before the powdered sugar, this will make mixing easier. Chill slightly, then form into one-inch balls.

Chocolate Coating

Choose from the following:

1 pkg butterscotch chips and 1 pkg chocolate chips, melted

Ambrosia block chocolate, milk, white or dark chocolate, melted in a double boiler
* or *
6 oz chocolate chips plus 2 tbsp shortening, melted in a double boiler

Melt the chocolate of your choice. Roll peanut butter balls in the chocolate with 2 forks or a dipping spoon (sold at Vanilla Bean), then place on a cookie sheet covered with waxed paper. Chill again, once set they can be stored in an airtight container in a cool location.
