Oreo Cookie Truffles

2 8-ounce packages K-Toos Oreo style sandwich cookies
6 ounces cream cheese, softened
1 teaspoon rum extract*
About 16 ounces semi-sweet chocolate chips
4 teaspoons vegetable oil
Candy sprinkles, optional

Line a baking sheet wth waxed paper and set aside. Finely crush cookies. Mix well with cream cheese and rum extract using an electric mixer. Shape into balls and chill on baking sheet for about an hour.

Over hot water, melt the semi-sweet chcolate chips with the vegetable oil. Stir carefully until smooth. Dip truffles in melted chocolate until completely covered. Return to baking sheet and sprinkle if desired. Chill until firm. Store covered in refrigerator.

*I think these would be great with real rum; I just didn't have time to experiment. You'd have to use a little less cream cheese because I think you'd want to use more than a teaspoon of real rum!
