Snowflake Cookies

1/2 cup unsweetened cocoa powder
1 cup white sugar
1/4 cup oil
2 eggs
1 teaspoon vanilla
1 cup gluten free flour
1 teaspoon baking powder
1/8 teaspoon salt
1/2 cup powdered sugar

  1. Mix cocoa, white sugar, and oil. Beat in eggs one at a time, then mix in vanilla.
  2. In a separate bowl, mix flour, baking powder and salt. Slowly add flour mix to cocoa mixture. Cover dough and chill 3 to 4 hours (overnight is best).
  3. Preheat oven to 350 F. Line cookie sheet with parchment or silpat. Scoop dough, using scoop or spoon and drop into powdered sugar. After coated, roll into balls and place on cookie sheet 2 inches apart.
  4. Bake 10 to 12 minutes until done (when you lightly press a finger on the middle of the cookie it doesn't leave much of a dent). Let sit on cookie sheet 1 to 2 minutes and then transfer to a rack to cool.
