Easy No-Bake Pumpkin Oatmeal Bars

1 cup old fashioned gluten-free oats
1/4 cup coconut flour
1/4 cup almond flour
1/4 cup SunButter (or nut butter)
1 teaspoon cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon ground nutmeg
1/4 teaspoon salt
3 tablespoons raisins (optional)
1/3 cup pumpkin puree (not pumpkin pie mix)

  1. Blend dry ingredients in a large mixing bowl.
  2. Stir in raisins.
  3. Using hands, form into balls.

Store in a covered container in the freezer.
