Peanut Butter Blossoms #3

1/2 cup butter
1/2 cup granulated sugar
1/2 cup brown sugar
1 egg
1/2 cup creamy peanut butter
1/2 teaspoon vanilla
1 cup potato flour (not potato starch flour)
2 tablespoons cornstarch
1 teaspoon baking soda
1 teaspoon baking powder
1/8 teaspoon salt
1/2 teaspoon xanthan gum
11 ounce package Hershey's chocolate kisses (about 50)
Additional granulated sugar for rolling cookies

Preheat oven to 325°. Mix ingredients thoroughly and let sit 10 minutes. Form into balls using a teaspoon of dough. Roll into granulated sugar. Put on greased cooky sheet. Bake for 8 to 10 minutes. Increase oven temperature to 350° and bake an additional 2 to 4 minutes till golden. Remove from oven and press Hershey's chocolate kiss in center. Return to oven for 1 to 2 more minutes. Cool 1 to 2 minutes on cookie sheet before removing.
