Mexican Wedding Cakes

1 cup butter
1/2 cup powdered sugar
2 teaspoons almond flavoring (or vanilla flavoring or half of each)
1 3/4 cups white rice flour
1/4 teaspoon salt
powdered sugar

Cream together the butter, powdered sugar and vanilla or almond flavoring. Blend in flour and salt. Shape into 1-inch balls. Place 1 inch apart on ungreased baking sheets. Bake in 325° oven for 15 to 20 minutes until set, but not brown. Cool slightly. Roll in powdered sugar. Cool completely; roll again in powdered sugar. Makes about 48 cookies. ( A delicious melt-in-your-mouth cookie. Fragile.)
