Almond Cookies

1 cup butter, room temperature
1/2 cup sugar
1 egg slightly beaten
2 1/2 cups white rice flour
3/4 teaspoon almond extract
1 teaspoon baking powder
1/4 teaspoon salt
Slivered almonds
Candied cherries
Powdered sugar
Whipping cream

Mix butter, sugar, egg, flour, almond extract and salt until smooth. Gather dough into ball. Knead slightly. Wrap in plastic wrap and refrigerate for 30 minutes.

Shape into 1-inch balls and arrange on baking sheet. Press a piece of almond and a piece of cherry in center of each cookie. Bake in 350° oven until firm and cookies begin to brown on edges, about 12 to 15 minutes. Cool and drizzle icing over cookies made from powdered sugar and whipping cream. Makes about 36 cookies.
