Almond Rice Cookies

2 eggs
1 cup (2 sticks) butter
1/2 cup honey
1 1/2 teaspoons almond extract
2 cups white rice flour
2 cups finely chopped almonds (2 3-oz bags sliced almonds run through a nut grinder works well)

Let butter soften to room temperature. Using mixer, cream with honey, eggs, and extract. Mix in separate bowl, flour and almonds. Add to wet mixture, mix in by hand. Scoop small mounds onto baking sheet. Dough is fairly loose. Bake at 325° for 12 to 15 minutes. Cool before removing from sheet. Glaze after completely cooled. Yield: 24 medium or 48 small cookies.


2 tablespoons powdered sugar
1 teaspoon almond extract
2 teaspoon skim milk

Mix together thoroughly. May tint for holidays.
