Chocolate Chip Cookies #4

2 1/4 cups gluten free flour mix
1 teaspoon baking soda
1 teaspoon salt
2 teaspoons xanthan gum
1 cup (2 sticks) butter
3/4 cup granulated sugar
3/4 cup packed brown sugar
1 teaspoon vanilla
2 eggs
2 cups chocolate chips
1 cup chopped walnuts

Combine flour, soda, salt and xanthan gum in a bowl. Set aside. Cream butter, sugar and vanilla in a large bowl. Add eggs one at a time beating well after each addition. Gradually add dry ingredients. Stir in chocolate chips and nuts. Chill dough for at least two hours. Drop by teaspoonsful onto ungreased cookie sheets. Bake 9-11 minutes in 350° oven. When cool remove from pan (can roll into balls instead of dropping by spoonsful. Can substitute chopped dates or dried cranberrries or raisins for chocolate chips).
