Dark Herb Cookies

1/2 cup shortening
1/2 cup brown sugar
1 egg
1/2 cup molasses
2 1/4 cups rice flour
1 teaspoon xanthan gum
2 teaspoons baking soda
2 teaspoons allspice
1 teaspoon cinnamon
1/2 teaspoon ground cloves
1/4 teaspoon salt
1/3 cup decaf coffee
1 tablespoon anise seed
2 teaspoons ground coriander

Cream together shortening, sugar, egg and molasses. Sift dry ingredients together. By thirds, alternately mix coffee and dry ingredients with creamed mixture. Spoon onto oiled cookie sheets leaving 2 inches between cookies. Bake at 350° for 10 to 12 minutes. Frost when cooled.

Frosting:

2 cups powdered sugar
1/4 cup dairy free margarine
2 tablespoons orange juice concentrate
1 teaspoon vanilla

Combine ingredients and add orange concentrate to the desired consistency. Yield: 3 dozen.
