Cream Cheese ‘Cookie Press’ Cookies (Spritz)

1 cup butter
3 oz cream cheese
1/2 cup granulated sugar
1 teaspoon vanilla
1 1/2 cups gluten free flour mix
1/2 cup sweet rice flour
1 teaspoon xanthan gum

Cream butter and cream cheese, add sugar and cream well. Then add vanilla. Sift together dry ingredients and blend into creamed mixture. Use cookie press to form cookies on ungreased cookie sheet. Bake 8 to 10 minutes at 375°. Don't overbake, as they dry out.

NOTE: Soft dough; maintains its shape while baking. On insulated cookie sheets, bake 9 to 11 minutes at 375°. May substitute almond flavoring for vanilla.
