Libby's Pumpkin Pudding is Libby's Pie Recipe, omitting the crust. Bake it in an oven-proof one quart casserole. Use the same heat and timing. The same ingredients and amounts are used:
1 15-oz can of "pure pumpkin"
1/4 cup sugar
1/2 teaspoon salt
1 12-oz can of evaporated milk (whole is most delicious, while skimmed works)
3 standard spices: cinnamon, ginger and cloves, all ground fine.
"Secret" addition for the slightly different taste: 1/4 teaspoon ground cardamom.
