Billy Sundae Pudding
Soak 1 cup pearl tapioca in 5 cups water overnight.
3 cups brown sugar
1 cup chopped dates
1 cup nuts (pecans are preferable)
Bake 1 1/2 hours at 350° F, or until tapioca is clear and pudding quite thick. Serve with a dollop of whipped cream or non-dairy topping.
