Glorified Rice Fruit Salad
2 cups cooked rice
2 tablespoon pineapple juice, add to rice
1 small can of pineapple tidbits, drained, add to rice
3/4 cup Baker’s sweetened flake coconut, add to rice
1 banana, sliced. Mix slices with 2 teaspoons lemon juice
1 cup sweet red cherries, quartered and pitted
1/4 cup raspberries
1 10-ounce carton whipped topping or 1 cup cream, whipped
When rice has cooled, stir in the sweet red cherries, banana slices with lemon juice, and raspberries. Fold in the whipped topping or whipped cream.
