Pea Salad

Makes 5 cups. Prep time - 10 minutes. Refrigerate 4 hours or overnight.

1 bag (16 ounces) frozen peas
1 cup mayonnaise
1 small onion, peeled and finely chopped
1 teaspoon black pepper
2 cups shredded cheddar cheese or a mix of cheese
1/2 cup grated Parmesan cheese

Place the peas in a colander and run under cold water until just thawed but still cold. Allow to drain and place in a large bowl. Stir in the mayonnaise (add more or less according to taste). Add the chopped onion, black pepper and cheeses. Mix well. Cover and refrigerate for at least 4 hours or overnight.
