Tomato Mint Salad

Dressing: Blend together these five ingredients:

1/4 cup olive oil
2 tablespoons red wine vinegar
1/2 teaspoon white pepper
1/2 teaspoon salt
1/4 teaspoon dried ground coriander

Place the following ingredients in a medium-size serving bowl:

1 small red onion, sliced thin
2 pounds tomatoes, seeded and sliced
3 small cucumbers, sliced
1 15-oz can white beans (white kidney or cannellini), drained and rinsed
1/2 cup pitted olives
2 tablespoons chopped fresh mint leaves

Pour dressing over salad ingredients and stir gently. Chill for up to a half hour before serving, or serve immediately at room temperature.
