Caponatina
1 eggplant chopped
1 large green pepper chopped
1 cup chopped onions
1 cup chopped celery
1/4 cup red vinegar
1/4 cup sugar
1 bottle green olives
2 cups tomato sauce
Brown vegetables in olive oil, then add tomato sauce, vinegar, sugar and olives. Simmer 15 minutes. Eat hot or cold.
